Beef Mince Chow Mein Slow Cooker

A real winter warmer, one of my family favourites passed on from my grandmother - mvg66
Ingredients

1 kg beef mince
-
1 tsp curry powder
-
1 onion diced
-
1/2 cabbage chopped
-
3 celery stick
-
2 carrot chopped
-
1/2 capsicum diced
-
215 g green beans
-
125 g corn cob kernels
-
45 g chicken noodle instant soup

3/4 cup long-grain white rice
-
1/4 cup water
-
2 tbs soy sauce *to taste
Method

Brown mince, curry powder and onion in fry-pan, drain off fat and add to slow cooker.

Add all ingredients except rice.

Add enough water to almost cover ingredients.

Cook for 4 hours on high or 6-8 hours on low.

Add rice 45 minutes before serving to thicken.

Serve with a splash of soy sauce on top for extra flavour.

Notes
Use food processor for quick vegetable chopping and add as much vegetables as you prefer - no real measurement, I just add what I have in fridge. You may need more curry powder. You can add more rice if 25 minutes after adding it is still very watery. It looks sloppy and not real nice but tastes great and even better the following day on toast.
